Wild Irish Smoked Salmon and Line caught Irish Smoked Tuna are just two of the products that the small family business, the Connemara Smokehouse on the West Coast of Ireland have to offer at the BBC Good Food Show in the NEC Birmingham on the 22nd - 26th of November.

The Connemara Smokehouse was first founded in 1979 by Graham Roberts parents. Graham & his wife Saoirse now run the Smokehouse and have taken in all the new demands a modern business today needs to survive. They pride themselves on traditional methods, and very high quality production and products have always been the company's priorities. Being Connemara's longest established Smokehouse and with years of experience passed down from generation to generation, the Connemara Smokehouse has become one of the world's leading manufacturers of high quality seafood, where every product is hand produced in the traditional way.

The Connemara Smokehouse in IrelandAt the Connemara Smokehouse, Graham assesses the fish for freshness, and then hand-fillets every fish himself to ensure quality. Then the sides are 'pin-boned', to remove bones. He carefully washes and lays the salmon out in beds of dry salt. This is done to cure the fish to give it good texture. The fish is given different salting times according to size and fat-content. After rinsing off the salt, the salmon are laid on racks and put into our kiln which was first commissioned in 1946, and the long smoking period begins.

The Connemara Smokehouse specializes in producing Wild and Organic Smoked Salmon and Gravadlax. They also stock other products including Honey Roast Smoked Tuna, and Plain & Peppered Smoked Mackerel and many more.

The Connemara Smokehouse has won a great array of Top Food Awards across the water and at home, including five medals at the Great Taste Awards in the UK They were the first to win the BIM Product Innovation Award for the Best New Seafood Product in Ireland, and have won the Bridgestone Guide Award Best In Ireland for the last five years. They also have been awarded the Authentic Hand Produced Logo which is only given to those who produce hand made food of local province in Ireland. They have been promoted to the highest achievable level of Super Hero in Rick Steinâs book of Food Heroes. Having already scooped the prestigious Favourite Specialty Producer Award as voted by the 135,000 visitors to the BBC Good Food Show, the Connemara Smokehouse will again be exhibiting at the BBC Good Food Show at the NEC in Birmingham.
